Disaster Strikes

In every bakers life there comes a time when nothing turns out right.  Every cake has a deadline and the pressure mounts the closer it gets.  Saturday started out great for me and little Sophie's 3rd Birthday Cake.  The theme, Under the Sea, and the request was for whales and sharks and turtles and fishies and crabs.  Easy enough.  I can do that. 
This is how the bottom chocolate layer turned out (keep in mind it's just dirty iced but it was unsalvageable in my mind, delicious, but ruined).  The top layer of chocolate cake cracked into about 6 pieces when I tried to put it together. The strawberry puree filling escaped the dam of buttercream piped on the edge to hold it in (I blame this on Saturdays humidity and my lack of a subzero fridge).
The worse part-  IT WAS DELICIOUS.  Probably one of my best purees to date.  The cake was so moist and delicious and with just the hint of buttercream and the strawberry filling... mmmmmm!  

Thank goodness I had a wonderful customer who understood and although I was up at 6 am this morning to rebake the whole thing, she was happy with just the top layer. 

Thank you Alanna for being so understanding and I'm glad Sophie loved her cake anyway!!
